We craft unique organic wines on the volcanic island of Nisyros, Greece. A group of friends from different countries who fell in love with the magnetic charm of Nisyros and aim to bring back to life its centuries-old winemaking heritage.
The Winery
The winery project aimed to the creation of a multi functional bulding integrated with the local environment. The plan follows the natural slopes of the crater of the volcano and it's entirely underground.
The building is developed on several levels dedicated to the different phase of the wines production. Its heart is the big fermentation room equipped with 15 tanks, both stainless steel and concrete, 6 clay amphoras and a small lab for analysis.
The only part of the building that emerge from the ground is the wine tasting hall and the restaurant, both facing the natural terrace with a stunning view of the volcano.
Our winemaking philosophy
In the heart of the Aegean, on the volcanic island of Nisyros, our winery was founded to produce wines that respect the land, enhance native grape varieties and celebrate the history of the vineyards and the people who cultivate them. We believe that quality comes from the field and our role is simply to preserve it on its journey to the bottle.
In the cellar, we follow a low-intervention approach: limited use of sulphites and minimal manipulation, allowing the wine to fully express its origin. In the vineyard, we practice organic viticulture, integrating biodynamic methods to maintain the natural balance of the soil and promote biodiversity. Each vineyard is a unique ecosystem where human intervention is limited to guiding the vine on its natural course.
Beyond our vineyards in Nisyros, we explore the surrounding islands of the Dodecanese in search of special plots, often forgotten or destined for mass production in large cooperatives. Many of these vineyards, cultivated for generations, face abandonment or uprooting due to economic pressures, putting an irreplaceable agricultural and cultural heritage at risk. We are reversing this trend by working directly with local winegrowers, the guardians of ancient grape varieties and traditional techniques, to build a lasting relationship of trust and support so that they can continue to cultivate these 'jewels of the Dodecanese' with dignity and sustainability.

The Dodecanese Selection
Ανεράιδες - Nereids Selection explores the potential of grapes from selected parcels throughout the Dodecanese. This selection aims to capture the unique character of exceptional terroirs, transforming the hidden ‘gems’ of the achipelago into wine and giving voice to stories that might otherwise remain unheard. Each label in this line tells a tale of the Dodecanese, bottling the cherished essence of terroirs, people and traditions.
The Special Collection
Μονοπάτια - Pathways Collection was born from our desire to collect wines that are the product of a journey of research and experimentation. The key word is ‘different’: unconventional materials and techniques become the tools, while the goal is to create something authentic and unique.

Ungrafted mountain vines 2024
THREE, TWO, ONE... LET'S GO!!!
The name describes our feelings when we first laid eyes on the mountainous vineyards in Charakaki, in Embonas, Rhodes. The excitement for the beauty of the landscape and the quality of the grapes, anticipation to create our first wine and collaborate with the local vine growers, determination & willpower, as the beauty of the landscape and the quality of the grapes gave us the strength to overcome all obstacles.
The grapes come from a parcel on the mountain Attavyros on the island of Rhodes. At an altitude of 900m., the steeply sloped vineyard is home to ungrafted vines, some over a century old. Rooted in pure schist soil, the vines are cultivated organically and without irrigation. The wine undergoes no clarifying treatments, allowing the terroir’s purity to shine through.
Grape variety: Athiri 100%,
Production: 3,000 bottles, yield of 50 Q/ha
Vinification: cryomaceration and cold sedimentation (pre-fermentation); slow fermentation at low temperature (15-18°C) without malolactic fermentation, ageing sur lees for 6-7 months in Inox steel tanks.
Description: DRY WHITE WINE. The wine is fresh, acidic and mineral. Aromas of apple, pear and grapefruit with flint notes and bread crust. Strong in alcohol, but balanced by the acidity and enriched by the saltiness an minerality.

FIVE, TEN, FIFTEEN... READY OR NOT, HERE I COME!!!
The name describes the journey of finding the finest grapes in Rhodes—like a game of hide-and-seek among the island’s vineyards.
Exploration, mystery and the ultimate satisfaction when we finally reached the stunning valley of Kymisala and gazed upon the vineyards.
The grapes come from a parcel near Embonas on the island of Rhodes. At an altitude of 600m., this parcel is situated rooted in red soils in the north-facing Kimisala valley. The grapes are cultivated organically without irrigation.
The wine undergoes no clarifying treatments, fully expressing the purity of the terroir.
Grape variety: Athiri 100%
Production: 3,000 bottles, yield of 55 Q/ha
Vinification: cryomaceration and cold sedimentation (pre-fermentation), slow fermentation at low temperature (15-18°C) without malolactic fermentation, ageing sur lees for 6-7 months in Inox steel tanks
Description: dry white wine. Smooth and aromatic. Banana, pineapple and white flowers such as linden blossom. Fresh, round and gentle.
Απύρι - Apyri

The name comes from the word Απύριa (Apyria) which refers, in the local dialect, to the paths that the smoke and heat of the volcano finds in between the rocks of the island, coming out in different places, releasing the classic sulphurous smell of Nisyros.
This orange wine is crafted from a selection of the best grapes from different parcels, vinified naturally with a partial skin maceration and aged in amphoras. Apyri expresses pure, intense aromas and preserves the natural complexity of the grapes.
Grape variety: Athiri 90% - Assyrtiko 10%
Production: 2,500 bottles, yield of 50 Q/ha
Vinification: 50% cryomaceration and cold sedimentation, 50% maceration on the skins.
Fermentation at controlled temperature (18-20°C), without malolactic, ageing in amphora and inox steel tanks sur lees for 6-7 months.
Description: dry orange wine. golden yellow color, with Intense and full aromas. Honey, tobacco, leather and flint, with a fresh side of white flowers and citrus fruits. Full body, tannic with a long last ending.
